I love chocolate, I mean who
doesn’t?
Recently Hershey took the cocoa
butter out of most of their products. They replaced cocoa butter with vegetable oil! People have been
complaining there is not the same chocolate flavor or texture. I am not the
kind of person to pick up a chocolate bar as a snack so this isn’t the end of
the world for me but for some chocolate lovers out there they need their fix of
delicious chocolate now!
I made dark chocolate truffles. I
started by taking 1 cup of heavy whipping cream and bringing it to a slight simmer
in a small saucepan. In a regular stainless steal bowl I put 16 oz. of bitter
sweet and dark chocolate. When making truffles using good chocolate is key, I
got Ghirardelli chips but a chunk of better quality chocolate would be better.
Once the cream came to a simmer I poured it over the chocolate and stirred
until everything was smooth and chocolaty, this amazing mixture is calls a ganache.
The proportion is 8 oz. of
chocolate to ½ cup of cream.
I let the ganache cool in a glass
container about an inch deep. After it cooled for about 2 hours the ganache is
not rock solid put hard, a buttery consistency. Using a small ice cream scoop I made them into balls
and coated the outside with cocoa powder. Make sure to work fast while they are
in your hands because it melts quickly.

Just a warning, when you bite into
these bad boys it is bitter, then after that you get the wonderful dark
chocolate ganache. I took these to school and got some request for milk
chocolate, so next I am making the ganache with milk chocolate and coating the
outside with melted chocolate and then cocoa powder. If you like this idea make
the ganache into your little balls and then put them back in the fridge for an
hour to let them cool again, THEN into the melted chocolate.
